Shrimp scampi used to be a dish I could only hope for at a fancy seafood restaurant. I didn’t think I could actually do a seafood dish the right way until I found the right recipe.

I first tried shrimp scampi in a deep pan on the stove and was amazed at how the lemon and butter and dry white wine came together beautifully! Then I thought… if I can cook Chicken Soup with Gluten Free Pasta, I can do this in the Instant Pot!

  • 1/2 box mini pene pasta
  • 2 cups chicken broth
  • 1/2 stick Butter
  • 1/4 cup dry white wine
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1.5 tsp grated lemon peel
  • 1.5 tsp Italian seasoning
  • 1.5 tbsp minced garlic
  • 1 lb frozen shrimp
