Mexican Pozole
Traditional Mexican soup dish, New Mexico chili base with hominy (corn family), and chicken thigh meat. Can also be made with beef or pork. Served hot with traditional toppings: cabbage, cilantro, green onion, radishes, lime or lemon.

Ingredients
  • 1packet Ricardo’s Pozole SeasoningAvailable on Amazon.com
  • 3-4pounds Boneless chicken thighsOr your meat of choice
  • 16cups Water
  • 105 ozcan HominyAppx amount (Juanita’s brand)
Instructions
  1. Cut chicken into bite-sized pieces & add to 8 quart pot.
  2. Add water & seasoning packet to chicken & bring to a boil. Keep at low boil for 45 minutes.
  3. Drain & rinse hominy from can, & add to pot. Continue cooking for 15 minutes.
  4. Serve hot & add your favorite toppings.

Pozole (pronounced “poh-SOL-aye”) is our family favorite to share when we gather together. This easy one-pot soup is a clean eating choice that mixes New Mexico chili peppers with your favorite meat like chicken (boneless or bone-on is fine), beef, or pork. We got together for New Years and our friends Julie & Richard brought over their pot for everyone to dip in all day long.
