Pozole (pronounced "poh-SOL-aye") is our family favorite to share when we gather together. This easy one-pot soup is a clean eating choice that mixes New Mexico chili peppers with your favorite meat like chicken (boneless or bone-on is fine), beef, or pork. We got together for New Years and our friends Julie & Richard brought over their pot for everyone to dip in all day long.

Ricardo's Pozole Seasoning is an excellent choice for this type of pozole, which can also be modified as a green chile version with Ricardo's Chile Verde packet.
